PANETTONE – Tasting session in Spigno Monferrato December 12th, 2015
We are approaching Christmas and Spigno is celebrating the most famous Xmas cake: the Panettone. So you could enjoy very nice wines together with great artisanal panettones tonight starting from 9pm.
The Panettone, a type of sweet bread loaf, is one of the symbols of Christmas.
It is made during a long process that involves the curing of the dough, which is acidic, similar to sourdough. The proofing process alone takes several days, giving the cake its distinctive fluffy characteristics. It contains candied orange, citron, and lemon zest, as well as raisins, which are added dry and not soaked. Many other variations are available such as plain or with chocolate.
There are many stories about the panettone; the one that I like the most suggests that the word derives from the chef of Ludovico il Moro who was instructed to prepare a sumptuous Christmas dinner, to which were invited many nobles of the district, and he forgot the sweet in the oven that almost charred. Given the desperation of the chef, Toni, a small kitchen boy, offers a solution: “With what is left in the pantry – a bit ‘of flour, butter, eggs, zest of lime and some raisins – this morning I cooked this cake. The chef agreed and, trembling, he stood behind a curtain to spy feedback from guests.
